A Seville Orange, otherwise known as a Bitter Orange is typically used to make traditional Marmalade.
It is also the variety of orange mostly used in cooking dishes such as, Duck a l’orange. This is because a Seville Orange pairs extremely well with meats, fish and other ingredients.
It is not typically eaten raw as it has a thick skin and bitter flesh, although the rind is popularly used in both baking and cooking.
