Cauliflower Croquettes


Cauliflower Croquette

  • 1 medium cauliflower chopped
  • 25 g butter
  • 40 g Parmigiano Reggiano cheese grated
  • 3 small eggs
  • 1 tablespoon fresh parsley chopped
  • All-purpose flour as needed
  • Breadcrumbs as needed
  • A pinch of nutmeg
  • A pinch of cumin
  • Salt to taste
  • White pepper to taste
  • Vegetable oil for frying


  • Place chopped cauliflower in a pot, cover with water and season with salt. Bring to a boil and cook until tender. Drain well.
  • Melt the butter in a skillet and add a few drops of extra virgin olive oil.
  • Add cauliflower and cook for 5 to 7 minutes, stirring frequently.
  • Transfer cauliflower into a mixing bowl.
  • Add two eggs, Parmigiano, parsley, and season with nutmeg, salt and pepper. Mix with a wooden spoon to combine.
  • Gradually add breadcrumbs as needed until you obtain a firm dough.
  • Take a spoonful of the mixture and form croquettes.
  • Pass them into flour, beaten egg and breadcrumbs.
  • Heat a pan with vegetable oil and fry croquettes until lightly golden.
  • Place them onto a kitchen paper to remove excess oil.
  • Serve and enjoy.


Additional tips

  • For a healthier version, you can bake croquettes at 180C° for 20 minutes, or until golden brown.
  • You can also use finely chopped stem.
